MAX 2 BTL / CUSTOMER
80+ year-old biodynamically cultiavted Grenache from Rivesaltes. Grapes are hand-harvested and whole-bunch macerate for 5 days before pressing. This year's Otium also includes a bit of old-vine Grenache Gris (about 10%) from a vineyard in Fourques that was farmed by Laurent & Melissa's mentor Alain Castex up until his passing. Laurent has farmed the vineyard since. Grapes are hand-harvested and destemmed, macerating separately for a few days. The juices are then blended and matured in one of Castex's old concrete tanks. Bottled unfined, unfiltered, no additional SO2. 12% ABV
