The Details

100% Sauvignon Blanc from southern Austria's Steirerland organically cultivated on 35 year-old vines planted to grey/black/red schistous soils. Grapes are hand-harvested and macerate for 3 days prior to pressing. Spontaneous fermentation in stainless steel tank; racked to neutral oak for 12 months' élevage. Bottled unfined, unfiltered, minimal (10ppm) added SO2.
