The Details
Field blend of Riesling, Welschriesling, Neuburger, Veltliner, Pinot Blanc. The grapes are hand-picked, passed through a sorting table, foot-stomped and then are macerated for 20+ hours with stems. Once the fermentation started, the wine was pressed on Nestarec’s prototype “treadle press” and the must put into stainless steel to finish. As the wine was taking its time to ferment, Milan decided to bottle it while the fermentation was still going, in December 2022, under crown caps with some lees, to get a lightly sparkling cloudy wine. Undisgorged, no SO2 added. 12.5%ABV
