The Details
From the rolling hills of the Veneto, what is historically Prosecco country, comes this gorgeous anachronism -- the still white wine of this northeasterly place, composed, primarily of that same variety upon which oceans of sparkling wine is based, Glera. This is 90% organically cultivated 64+ year-old Glera with bits of local varieties Bianchetta Trevigiana & Boschera thrown in. Grapes are hand-harvested, partiall destemmed and crushed, partially directly pressed. Spontaneous fermentation and aging for 8 months thereafter is in concrete. Bottled unfined, unfiltered, minimal (<25ppm) added SO2.
