The Details
From old (70-80 year-old) biodynamically cultivated vines on decomposed granite in the Gard, this is Aramon, Grenache, Cinsault, & Carignan. Grapes are hand-harvested and whole-cluster spontaneously co-ferment in concrete before pressing and aging also in concrete for 9 months. Bottled unfined, unfiltered, no additional SO2.
