The Details
35% Syrah, 35% Carignan, 35% Cinsault from three small clay/limestone terraces laced with fine gravel, organically cultivated.
The grapes are hand-harvested, de-stemmed and vat in small superimposed layers ("a la Lasagna" cc: Steven Graf), alternating the three varieties of the cépage. Spontaneous co-fermentation takes place in the same vat for 10 days prior to pressing and blending with free-run juice. Aged in vat for a further 15 months with light racking. Bottled unfined, unfiltered, no additional SO2.
