The Details

Gamay and Grolleau biodynamically cultivated on 40 and 60-year-old vines respectivley. Grapes are hand-harvested and vinified separately: Grolleau is 1-week whole-bunch maceration before pressing and Gamay is 1-week whole-bunch with some directly pressed juice co-fermenting with the macerating juice. Blended and aged in tank on the fine lees for 8 months before bottling unfined, unfiltered, no additional SO2. 11.5% ABV
