100% Fer Servadou organically grown on old-vines in a grape variety conservatory in Marcillac-Vallon. Grapes are hand-harvested, and whole-bunch macerate for 1-week prior to gentle pressing and a blending of free-run and pressed juices. Spontaneous fermentation. Élevage of ~12 months prior to being bottled unfined, unfiltered, minimal-no-added-SO2 depending on the vintage. 11.5%ABV
