The Details

100% Fer Servadou from ~30 year-old vines that peer out over the Selves (river) from their steep perch. Grapes are hand-harvested, macerate for one-week in whole-bunches prior to gentle pressing and a blending of free-run and pressed juices. Spontaneous fermentation. Élevage is ~12 months in neutral barrique before being bottled unfined, unfiltered, no additional SO2. 11.5%ABV
