The Details

100% Fer Servadou from a few different parcels grown at a grape variety conservatory not far from Nicolas' domaine in Marcillac-Vallon. Massale selection of organically farmed Fer. 450m elevation, granitic soils. Grapes are hand-harvested, destemmed, gently pressed, and spontaneously fermented a la infusion method (whole berries in already-fermenting juice). Élevage lasted around 12 months prior to bottling unfined, unfiltered, minimal-no-added SO2 depending on the vintage. 11.5%ABV
