The Details

100% old-vine Chenin Blanc plus some younger vines planted astride the Selves river in the Valley it carves near Campouriez in the Aveyron. Grapes are hand-harvested and directly pressed in an old Burgundian vertical press. Spontaneous fermentation and élevage in neutral barrel. Bottled unfined, unfiltered, no additional SO2. 12%ABV
