The Details

100% Chenin Blanc hand-harvested from organically cultivated 18 year-old vines grown in silty clay and limestone soils in the Anjou sub-region of France's Loire Valley. The grapes are directly pressed using a horizontal press into tank where native yeasts kickstart and complete alcoholic fermentation. The wine is finished and aged for 6 months on the lees in neutral oak barrels.
