100% Sauvignon Blanc (purchased from Mikael Bouges) from organically cultivated 40+ year-old vines in the clay/flint/limestone soils of Touraine, middle Loire. Grapes are hand-harvested, directly pressed, and the juice spontaneously ferments in fiberglass vat and ages thereafter sur lie for 9 months prior to bottling unfined, unfiltered, minimal (25ppm) added SO2.
