The Details
100% Sauvignon Blanc grown on chalky soils from 25-year-old vines, macerated on the skins for two days. Wild yeast fermentation, unfined, unfiltered, 30ppm of SO2 at bottling. A quite savory and spirited wine, with a lemon oil nose. The palate is rich and full in the mouth, with buckwheat honey and tarragon. Quite unlike any Sauvignon we've ever tried, but something that could only come from Grecian terroir.
