The Details
From 40 year-old biodynamically cultivated Cabernet Franc vines in the black loam/limestone soils of their corner of Anjou, this is the Cousins' 'Pur Breton.' Hand-harvested, destemmed and slowly, gently pressed after a ~1 week maceration. Spontaneously fermented and aged in neutral barrel for ~1 year before bottling unfined, unfiltered, no additional SO2.
