The Details
Equal parts Syrah/Mourvèdre/Grenache sourced from 5 different friends who organically tend vines across surrounding villages of Calce in France's Roussillon. Grapes are hand-harvested, macerate for 5 days prior to pressing. Spontaneous fermentation and aging in a combination of cement and stainless steel tank for 7 months. Bottled unfined, unfiltered, minimal (<20ppm) added SO2.
