This is a velvety, lifted expression of Grenache from Phillippe Formentin of Opi d’Aqui, who works around Clermont l’Hérault in Southern France’s Languedoc. The lightest, brightest, and purest Languedoc Grenache we've had in recent memory.
Vinification: 100% Grenache hand-harvested from a vineyard site named ''l'Abricotier." Once harvested, one-eighth of the grapes are destemmed and placed at the bottom of his tank. The remaining 7/8s are put into the tank atop the destemmed foundation. Due to the weight, the destemmed base is slowly crushed and begins to ferment and semi-carbonically macerate. The whole-bunches do not undergo fermentation until this tank is pressed 15 days and full alcoholic fermentation is completed. Bottled unfined, unfiltered with no additional SO2.
