The Details

80% Pansa Blanca / 20% Garnatxa Blanca from 5 different parcels. Grapes are hand-harvested and macerate for anywhere between 2 hours and 2 days depending on ripeness of parcel, prior to pressing. Spontaneous fermentation and aging in a combination of stainless steel and 300L neutral barrel (80% the former, 20% the latter). Bottled unfined, unfiltered, no additional SO2.
