The Details
Equal parts Pignoletto (Grechetto Gentile) & Malvasia from organically cultivated vines in Emilia-Romagna. Grapes are hand-harvested and vinified separately. Pignoletto macerates for 2 days; Malvasia for 3 months in Qvevri. They are blended thereafter and age together in tank before bottling with the addition of fresh must from the 2023 harvest to kickstart re-fermenation in bottle, resulting in carbonation. Unfined, unfiltered, no additional SO2.
