The Details
100% Sangiovese from 30 year-old vines planted in limestone soils of Greve 17km south of Firenze. Grapes are hand-harvested, 90% destemmed, 10% whole-bunch spontaneously fermented for 15-20 days in concrete vats. Maturation lasts 14 months also in concrete. Bottled unfined, unfiltered, minimal added SO2.
