The Details

Mainly Nero D'Avola with small amounts of Catarratto, Insolia, and Moscato d'Alessandria from star-turned western Sicilian winemaker Giuseppe Cipolla of Passofonduto. One of the wines this year we couldn't stop thinking about -- now in magnum!!

80% of the blend is directly pressed Nero d'Avola. 20% of the blend is a 2-day co-maceration of Nero D'Avola and white grapes (75/25 is proportionate breakdown of this bit). Spontaneous fermentation is in a combination of barrel and fiberglass followed by a blending of all the juices in stainless steel. Unfined, unfiltered, minimal added SO2 at bottling. 12%ABV
