The Details
100% Cabernet Franc from old-vines. Hand-destemmed, the grapes undergo long spontaneous fermentation in open-top wooden vat prior to 3+ years élevage in fiber tank. Bottled unfined, unfiltered, no additional SO2.
From Candes Saint Martin tucked in a little cave in Chinon, the great Patrick Corbineau quietly produces remarkable, myth-making Cabernet Francs from very old-vines, organically-plus farmed and aged thereafter for at least 3 years.
