100% Riesling. Grapes are hand-harvested from three practicing organic vineyard sites, from vines nearly 100 years old mostly grown on slate and alluvial soils. Whole cluster fermentation using wild yeasts. Matured in a mixture of stainless steel, fiberglass and traditional Fuder, for 1-6 months on the lees. Unfined, unfiltered, no SO2.
