The Details
100% Aligoté from 40-90 year-old vines biodynamically farmed by Seiichi in addition to a purchase of some grapes from a nearby organic vineyard he does not farm, both in the Côte de Beaune. Grapes are hand-harvested, and pneumatically pressed over a few hours. Juice settles for 12 hours prior to spontaneous fermentation and aging for at least 12 months sur lie in 228 & 500 L neutral barrels. Transferred to tank for a final 3 month maturation before bottling unfined, coarsely filtered, and minimal (~30 ppm) added SO2.
