40% Mencía, 40% Trousseau, 20% Palomino from regeneratively farmed vineyards planted in felsite & pink quartz soils in Cambria & Fresno in California's Central Coast.
Grapes are hand-harvested, Mencía & Trousseau co-ferment/macerate whole-cluster with destemmed Palomino in repurposed stainless steel dairy tanks for 3 weeks. The wine is then pressed into 500L used French Oak. Unfined, unfiltered, no SO2. (Zero/Zero).
