The Details

100% biodynamically cultivated Chardonnay from cool west-facing parcels planted to 15 year-old vines clay/limestone/marl near the village of Plottes. Grapes are hand-harvested and directly pressed to neutral barrel for spontaneous fermentation and a two year élevage thereafter with some of the wine aging in stainless, some entirely in barrel. Assembled and bottled unfined, unfiltered, no additional SO2. 11.5% ABV
