The Details

50% País, 25% Cinsault, 25% Moscatel de Alejandría from Los Pellines. 80 year-old vines. Grapes are hand-harvested, destemmed, and macerate in open vat for 2 weeks prior to pressing. Spontaneous fermentation and aging for 10 months before bottling unfined, unfiltered, minimal added SO2.
