From producers Tess Bryant and Nic Coturri:
"Both bottlings are from historic 1880s plantings of dual-purpose apples, planted on the mixed sandstone soils of Waldron Island, a remote island next to the Canadian border with no ferry access. West Coast orchards of this age are now few and far between, many having been ripped out during prohibition era, and those that survived are generally neglected in favor of higher yielding, dessert-apple producing trees planted in the hot and arid eastern half of the state. We feel incredibly lucky to get to work with this fruit.
No additions at any time (no sulfites, yeasts, or sugars added).
Bottles are not disgorged and need to be served properly cold after settling upright for a day or so after shipping."
