The Details

100% biodynamically cultivated Catarratto in sandy soils 600m up high above the city of Monreale in northwest Sicily. Grapes are hand-harvested, directly pressed, and spontaneously ferment in cement tank. Bottled with a bit of must of the base wine to kickstart secondary fermentation in-bottle. Unfined, unfiltered, undisgorged no additional SO2.
