The Details
Zero/zero Languedoc red with freshness and lift. 85% Cinsault/8% Mourvèdre/7% Grenache from organically cultivated vines just northwest of Nîmes. Grapes are hand-harvested and vinified separately. Mainly destemmed with a small inclusion of some whole-bunches. 5-6 day maceration all in concrete prior to blending and aging also in concrete. Bottled unfined, unfiltered, no additional SO2.
