100% Gewürztraminer from 2 parcels -- Saint Hippolyte, 50 year-old vines; Schlossberg 30 year-old vines -- and vinified separately. Schlossberg is picked early and directly pressed to fiberglass tank. The Saint Hippolyte parcel is harvested one week later and chucked in whole-bunches into the white juice from Schlossberg (infusion/flotation). Spontaneous fermentation and infusion for 7 days prior to pressing and élevage in neutral barrel. 6 months on the lees. Bottled unfined, unfiltered, no additional SO2. 12.5% ABV
