Pinot Gris / Pinot Auxerrois from 2 parcels - Auxerrois in Saint Hippolyte on 35 year-old vines and Pinot Gris in Schlossberg on 25 year-old vines. Auxerrois is directly pressed to fiberglass; Pinot Gris macerates whole-bunch, separately, also in fiberglass for 7 days. Pressed after 7 days and blended. Spontaneous fermentation all in fiberglass - élevage in neutral barrel (220L and 600L) for 6 months before bottling unfined, unfiltered, no additional SO2. 13% ABV
