Mandó, Sumoll, Xarel-lo hand-harvested from biodynamically cultivated vines 10-50 years-old in calcareous clay soils in Catalonia's Penedés. Mando + Xarel-lo co-macerate for 17 days. Sumoll is directly pressed into the juice. Spontaneous co-fermentation with the lees takes place in stainless prior to being bottled unfined, unfiltered, no additional SO2.
