The Details
From the Côte des Bar, this is 100% biodynamically cultivated Pinot Noir on kimmeridgian marl that is hand-harvested, directly pressed and spontaneously ferments in stainless steel (full malo) prior to transfer to neutral oak for 8 months' élevage. 5mg/L dosage. Bottled unfined, unfiltered, minimal SO2 and rested sur latte for 36 months under crown cap prior to disgorgement and re-capping with cork, cage, and foil and 6 more months in bottle before release.
