The Details

100% old-vine País (200 years-old) biodynamically cultivated on basaltic (volcanic) soils. Grapes are hand-harvested 60% destemmed 40% whole-cluster spontaneous fermentationa and aging in neutral barrel. Unfined, unfiltered, minimal (<10ppm) added SO2.
