The Details

LIBRARY SELECTION 100% Pinot Noir that is an extension of the Fosse Grely vineyard at the bottom of their hill in Essoyes. Grapes are hand-harvested, naturally cold settled with winter frosts. Spontaneous fermentation and aging on the fine lees in 225L barrel and 500L demi-muid for 9 months before bottling with concentrated grape must to kickstart secondary fermentation in bottle. Aged on the lees in bottle for 18-20 months before manual disgorgement. Unfined, unfiltered, no additional SO2.
