The Details
From Samuel Boulay in the Ardèche, this is mostly biodynamically cultivated Alicante with Syrah, Cabernet, and Merlot. Grapes are hand-harvested and vinified separately - Alicante gets a 1 week maceration the rest a touch shorter before blending. Élevage in neutral barrel for 1 year before bottling unfined, unfiltered, no additional SO2.
