1/3 each Chardonnay, Pinot Noir, Gamay from organic or biodynamically cultivated vineyards in Côte Chalonnaise, Champlitte, & the Mâconnais (for Pinot), Gamay from the Pierres Dorées in Southern Beaujolais, and Chardonnay from Uchizy. Whole-cluster spontaneous co-fermentation for the Pinot + Gamay with freshly pressed must of the Bourgogne Blanc that Chris makes poured over. Three-week spontaneous fermentation without punchdowns in sealed vat prior to 8 months aging sur lie in stainless steel. Bottled unfined, unfiltered, minimal added SO2. 11.5% ABV
Tasting this delicious concoction, we half-jokingly would refer to it as Baby 910 (referring to Julien Guillot's iconic Cuvée 910 composed of this cépage with some more ancient strains of Pinot & Gamay thrown in for good measure). It's tasty!
