80% Nebbiolo, 20% Vespolina. 40+ year-old vines grown on a sandy, mineral-rich hill overlooking the eponymous 'sanctuary' of the domaine, in Boca. Grapes are hand-harvested, destemmed and spontaneously ferment in stainless steel tank. Macerated separately, the juices are pressed and blended and aged in a 500L neutral Stockinger barrel for 3 years. Bottled unfined, unfiltered - aged a further year in bottle - and minimal (<15ppm) added SO2.
