The Details
100% biodynamically cultivated Chenin Blanc from young vines planted in limestone soils outside Saumur. Though picked earlier than "Les Gruches" the 2022 of Poil de Lievre shows fine texture and balance thanks to a uniquely hot vintage. Directly pressed to neutral barrel for spontaneous fermentation and a short élevage sur lie prior to bottling unfined, unfiltered, no additional SO2.
