100% Grolleau from Anjou, older vines (40ish years-old). Grapes are hand-harvested, 90% destemmed, 10% whole-cluster spontaneous fermentation/maceration for 8 days before pressing. Aging in tank for 9 months, bottled unfined, unfiltered, no additonal SO2. <11% ABV
