The Details
Biodynamically cultivated in the home orchard on South Hill in New York's Finger Lakes region, this is a blend of a host of native apple varieties - 20.7% Calville, 18.3% Goldrush, 16.4% Dabinett, 12.2% Sam Young, 10.4% Ashmead's Kernel, 7.4% Golden Russet, 7.3% Porters Perfection, 7.3% Michelin. Apples are hand-harvested, co-fermented spontaneously and aged in tank before bottling with the additional of fresh must for secondary fermentation in bottle (traditional method). Unfined, unfiltered, no additional SO2. 8.1% ABV
