The Details

Old-vine Sauvignon Blanc & Chardonnay (~80 years-old) from Lolonis Vineyard in Redwood Valley. Grapes are hand-harvested and softly, directly pressed to separate vessels for spontaneous fermentation. Chardonnay to puncheons, Sauvignon Blanc to stainless steel before transfer to neutral barrel. Blended after 1 year and rested/settled for a short period of time in stainless steel before bottling unfined, unfiltered, no additional SO2.
