The Details

Old-vine Sauvignon Blanc from the Yorkville Highlands. A portion of the grapes are directly pressed while remaining bunches are chucked into the fermenting juice to macerate whole-cluster for 1-2 weeks. Pressed and aged for 1 year in neutral barrel prior to bottling unfined, unfiltered, no additional SO2.
