The Details
Highly prized, exceptionally rare Chenin Blanc from a modern maestro -- this is from a new parcel closer to the gently rolling hillsides of Bonnezeaux in Thouarcé in Anjou, near the river Layon. Biodynamically farmed, hand-harvested, gently whole-bunch pressed and spontaneously fermented and aged in neutral wood prior to bottling unfined, unfiltered, minimal (used to be zero/zero, now employs <20ppm at bottling) added SO2.
