Vinification: 100% organic Vidiano from the Island of Crete. Grown on Limestone soils. Hand-harvested and fermented on the skins for 21 days in stainless steel. Rests on the lees for another 5 months in tank before bottling unfined, unfiltered, with just a touch of SO2.
Tasting: Citrus peel on the nose and peach, apricot, pear fruit on the palate. Subtle but pronounced acidity, nice minerality. A great crowd-pleasing skin contact white.
