About the wine

100% Parellada from 500-700m elevation in Conca de Barbera, Catalonia. 

The grapes are typically picked in late Oct; 50% of the grapes see 21 days on the skins while 50% of the grapes macerate for just 12 hours prior to pressing into stainless steel tank where the juice will undergo spontaneous fermentation. The two are blended together and see a short maturation in tank prior to being bottled unfined, unfiltered.
