The Details

Organically cultivated Parellada grown as bush vines in the calcareous clay of Catalonia at 500-700m elevation. 60% of the grapes are directly pressed, 40% macerate for 20 days both in stainless steel. Spontaneous fermentation and a short maturation prior to bottling unfined, unfiltered, no additional SO2.
