The Details
100% Sangiovese from young vines planted at elevation in Greve in Chianti's schistous/sandstone soils. Grapes are hand-harvested, 70% destemmed, 30% whole-bunch co-macerated/spontaneously fermented for 4-5 days. Pressed to concrete egg, stainless steel, and ceramic vat for 8-10 month élevage. Bottled unfined, unfiltered, minimal (<10ppm) added SO2. 13% ABV
