The Details

From the Moutherot hillside in the Doubs made famous by Georges Comte, this is 80% Chardonnay, 20% Pinot Noir from organically cultivated vines. Grapes are hand-harvested, directly pressed and co-spontaneously fermented in steel before pressing and aging for 1 year also in vat. Bottled with fresh must to kickstart secondary fermentation in bottle. Unfined, unfiltered, no additional SO2. 12% ABV
